Now I have replaced most with either Wustoff or Global. I have to physically resharpen the chicago every 3 months and put an edge on them every use. I have yet to resharpen my wustoffs or Globals. |

I used to have some - I'd need to sharpen them before each use after about a year. I too now use Wusthof. I've been using them for 4 years now and have never sharpened them (I do hone them every once in a while). They're more expensive, but they will never need to be replaced. <edit>: Just a bit more advise to aid you in your knife shopping since it is a fairly significant investment. I don't know if Chicago Cutlery comes with other style handles, but I've never cared for the bulky feel to the wood handles. Wusthof (and other high end knives) have a better feel in the hand. The handle is more comfortable and the weight of the knife feels more balanced as you hold it - just a more natural feel when using it. When you're in the store, ask a salesperson to take some of the knives you are considering out of the case so you can compare what feels better for your hands. Enjoy! |
